Dal 1996 cuciniamo il mare e la terra di quest'isola in una sala ricavata da un'antica stalla, a duecento passi da Palazzo dei Normanni.Since 1996 we have been cooking the sea and the land of this island in a dining room carved out of an ancient stable, two hundred steps from the Norman Palace.

La nostra sala nasce dove un tempo c'erano una stalla e i suoi abbeveratoi in pietra. Li abbiamo lasciati esattamente dov'erano: due grandi conche scavate nel calcare, incorniciate da una parete di maioliche e da un delicato fregio d'edera. Sono la ragione per cui, quasi ogni sera, qualcuno alza gli occhi e chiede di che secolo siano.Our dining room was born where a stable and its stone drinking troughs once stood. We left them exactly where they were: two great basins carved into the limestone, framed by a majolica wall and a delicate ivy frieze. They are the reason why, almost every evening, someone looks up and asks which century they come from.
Attorno, il quartiere più vivo del centro storico: Palazzo dei Normanni e la Cappella Palatina a duecento metri, la Cattedrale poco oltre, i banchi di Ballarò dietro l'angolo. Un pranzo qui è la sosta naturale fra due meraviglie.Around us, the liveliest quarter of the old town: the Norman Palace and the Palatine Chapel two hundred metres away, the Cathedral just beyond, the market stalls of Ballarò around the corner. Lunch here is the natural pause between two wonders.

Una piccola cantina di prodotti di nicchia: vignaioli siciliani che lavorano poche bottiglie e le lavorano benissimo. Nerello dell'Etna, Perricone, Catarratto, Nero d'Avola senza solfiti aggiunti. La carta cambia di continuo, perché ci sia sempre qualcosa di nuovo da scoprire.A small cellar of niche producers: Sicilian winemakers who work few bottles, and work them beautifully. Etna Nerello, Perricone, Catarratto, Nero d'Avola with no added sulphites. The list changes constantly, so there is always something new to discover.

Ai Normanni nasce con Vincenzo, Pippo e Lidia, che di questo locale hanno fatto una magia. Vincenzo ci ha insegnato che la cucina è un'arte e che un buon cuoco è un artigiano, non un artista. Pippo ha rinnovato quell'insegnamento ogni giorno per quindici anni e l'ha consegnato a Marco.Ai Normanni began with Vincenzo, Pippo and Lidia, who turned this little place into something magical. Vincenzo taught us that cooking is a craft and that a good cook is an artisan, not an artist. Pippo renewed that lesson every day for fifteen years and passed it on to Marco.
